Pharmacologists confirm that celery seed is a carminative, effective for the relief of gas pains, and their research suggests celery seed may also have a sedative action. Stalks of cultivated celery are eaten raw or cooked; leaves and seeds are used as flavoring for soups and stews. The seeds mixed with salt make celery salt. Celery seed oil is the flavoring agent in "celery tonic."
