Breakfast Truffles: Superfood Edition has arrived!!!
Goji berries and hemp seeds in delicious truffle form for an early-morning pre-workout snack??? Ummmm yes please. These oughta fuel a fantastic workout, eh?
Speed post today, still trying to cram as much unpacking as possible. Fortunately these are giving me plenty of energy!
yields 12 truffles
1 1/4 C dates
1/2 C hemp seeds
1/2 C goji berries
1/4 C sunflower seeds
1/4 C raw peanuts
1/4 C unsweetened cocoa powder
1 t almond extract
1 T maple syrup
Soak the dates and goji berries in some hot water for about ten minutes and then drain thoroughly. Then blend everything together until it sticks together and you can roll it into a ball.
These are not as sweet and dessert-like as most of my breakfast truffles, so give the mixture a taste and adjust if you need to. I added a tablespoon of maple syrup, but then wished I'd added more. So to make up for it, I rolled these guys in vanilla sugar! I totally recommend it. If they're sweet enough for you or you add more maple syrup, then you can roll them in hemp seeds, more cocoa powder, or crushed peanuts. Mmm.
Shape into balls, roll in whatever coating you'd like, and you're set!
